Most of that will not apply in the WordPress world. You need a plugin like Gravity Forms to do something like that if we're talking about generic forms, and if you're trying to sell some sort of membership package, you need to skip Easy Digital Downloads and the forms plugin and go with something like Paid Memberships Pro. Learning how to do forms in HTML is useful so that you understand how forms work on the web and at least the basics of the submission process.

ECommerce always has a lot of moving parts, so easy is never a term I would associate with it, unless you're using a hosted service like Shopify which handles all the moving parts for you except for some specific details you need to configure. With that said, you're probably not going to get something that will be easier than WooCommerce, assuming you need a full ECommerce solution.
